Farmhouse Egg Bake
I love this recipe because it feeds our family with one pan and I can use any kind of vegetable or meat to make different flavor combinations. The pans pictured below are ham & spinach, and one has red onion (so good!)
The recipe makes one pan, but I like to double it to have leftovers for an easy lunch.
Ingredients:
10 eggs
2/3 cup plain yogurt
1 TBSP room temp butter, plus more for the pan
1 tsp Redmond real salt
½ tsp black pepper
1 tsp garlic powder
2 tsp mustard
1 cup diced ham or sausage, cooked
½ cup veggies such as spinach or peppers (if using frozen spinach, thaw and squeeze water out before using)
1 cup shredded cheese
Fresh or dried herbs
sliced red onion for garnish, optional
Directions:
Set oven to 350 F.
Setting aside 1 TBSP butter, grease a 13 × 9 inch baking dish with remaining butter.
Chop the meat and veggies and place in 13 × 9 inch dish.
In a blender, add eggs, yogurt, 1 TBSP butter, spices and mustard.
Pour into the dish and top with shredded cheese, herbs, and thinly sliced red onion.
Bake for 35-40 minutes until the center is set and firm.
