Apple + Raisin Baked Oatmeal
I whipped up this twist on my Baked Oatmeal recipe for breakfast yesterday, and it was so good!
The cozy flavors, soft apples, raisins and hearty oatmeal made a filling breakfast that my family gobbled up.
Enjoy!
Ingredients:
4-5 small apples, cored and chopped small
0.5 cup melted butter (1 stick)
4 eggs
0.5 cup sugar, honey, or maple syrup
6 cups old-fashioned rolled oats
4 tsp. baking powder
1 tsp. salt
1 tsp ground cinnamon
0.5 cup raisins
2 cups raw grassfed milk! :) + extra for pouring on top when serving
extra butter for buttering the pan
Preheat oven to 350°F.
Butter a 9x13 inch pan with the extra butter.
Melt 0.5 cup butter in a large pan or pot. Add chopped apples and cook until the apples are soft.
While the apples are cooking, mix in a large bowl: eggs, sugar, oats, baking powder, salt, cinnamon, and raisins.
Stir in the 2 cups of milk.
Add in butter/apple mixture.
Pour into the 13 x 9 inch buttered pan.
Bake for 30-35 minutes until slightly golden brown on the edges. We prefer a softer oatmeal rather than dry and if I know I'll reheat it for another meal, I will bake it a few minutes less.
Serve warm with raw milk poured on top. You have to have it with milk! :) Enjoy!
